There exist honeys that appear in no catalogue.
Nectars harvested by beekeepers whose names belong in no database.
The Honey Factories does not sell honey.
It protects it.
Each month, the institution mounts an expedition. It brings back honeys in very small production, ordinarily reserved for the local markets of their producers — and assembles them, sealed and numbered, into a single coffret.
Three honeys from a single expedition. Three hand-blown glass flacons, each sealed with beeswax from the same hive. A wooden module designed to be kept, displayed, and collected — one expedition at a time.
An illustrated document. The territory, the species, the beekeeper. Original artwork commissioned from an artist of the region. Twelve pages on laid paper, in a numbered edition. No reprint. Ever.
A hand-turned wooden spoon. Wood that does not alter the taste — the gesture of tasting, before the gesture of speaking about it.
Beyond the coffret, the institution opens its library. Six notebooks gather, sheet after sheet, what we have brought back from our expeditions, readings and encounters — Anthophila, Pabula apum, Genius loci, Mellificium, Proprietates organolepticae, Historia medica.

A surprising decorated coffret, a magnificent booklet crafted by an artist attached to his land, a wooden honey spoon and of course exceptional honeys.
Each territory. Each species. Each object.
